Mariia combines a passion for collecting with culinary precision — between forest, fermentation and fine desserts.

Born in Russia, Mariia feels as at home in nature as she does in the kitchen. She collects herbs and flowers, ferments her own kombuchas and uses them to develop sophisticated components, particularly in patisserie. Her use of ingredients is mindful, inspired by sustainability and artisanal curiosity. She came in second place at the Marmite Youngster Award — a confirmation of her talent but never her goal. Mariia works focused, calmly and with a clear view of what should be hers: a separate place for taste and responsibility.
