When Head Chef Vilson develops the seasonal Menu together with his team, Sommelier Jean-Luc is involved from the very beginning. Inspired by the kitchen's aromas, he creates finely tuned non-alcoholic pairings - sometimes delicate, sometimes bold, always with a keen sense of balance.
When it comes to wine pairings, Jean-Luc also focuses on character and origin: carefully selected wines take center stage. With his expertise, refined palate, and passion for the exceptional, he turns every pairing into a true experience.
To round-off the evening, we serve “La Stanza” espresso from our traditional piston coffee machine. As an alternative, Jean-Luc offers freshly brewed tea. Of course, we also have a selection of fine spirits.
