Our philosophy

The elmira is characterized by two special features: our culinary approach and the overall experience with the extraordinary procedure. The reason is very simple: The elmira wants to be a place where it's all about you. And about sustainable pleasure.

For our menus, we select simple ingredients as well as rarely used parts of plants or animals. Through our unique preparation methods, we create flavors and textures that you may never have experienced in this form and intensity. After just one year, the Michelin Guide awareded us a star for our efforts.

We received the Michelin green star for sustainability for good reasons: Our chefs apply the principles nose to tail and root to leaf when creating their dishes. When it comes to meat products, we pay attention to animal welfare. We also only buy the quantities for the menus booked in advance. This is how we avoid food waste.
